Oil-based sponge cake is always associated with summer baking. It doesn’t have to be that way. Use frozen cherries, blueberries, peaches or strawberries. This amazingly quick cake is light and very tasty. A few ingredients you have in your kitchen cupboard will do. Mix for 5 minutes and put in the oven. Check it out for yourself.
Composition:
- wheat flour 250 grams,
- 150 ml of milk,
- 100 ml of sunflower or rapeseed oil,
- 2 eggs
- 1.5 teaspoons of baking powder,
- 2 teaspoons of cocoa
- a cup of sugar
- 2 teaspoons of vanilla sugar,
- frozen cherries or blueberries.
Preparation.
- Sift the flour thoroughly with a sieve.
- Beat the eggs until thick and fluffy with the addition of sugar.
- If you want to conquer the sweetness, just add a pinch of salt.
- Then pour in the milk.
- Add baking powder and cocoa.
- Mix everything until you get a lush consistency.
- You can also do this with a whisk or a whisk.
- Lightly coat the frozen fruits in flour and add to the dough, distributing evenly.
- Pour the dough into a 22 cm diameter mold lined with baking paper.
- Bake at 180 degrees for 35-40 minutes.
- Before removing, insert a skewer into the cake and check if it is dry inside.
If you want to make the dough even better, just add liquid butter. It will increase the taste and smell of the cake during baking. Add in the oil 2 teaspoons of liquid butterwhich will freeze after dissolving. Frozen fruits should not be thawed. Rolling them in flour will prevent them from falling during baking.
